

When I was a kid I wasn’t such a big fan of sweet food, well maybe except ice cream and candies. While hubby, on the other hand, is a big kid when it comes to sweets and desserts. He stashes M&M in his office drawers or jacket pocket — and loves his dessert, which is usually swimming in heavy cream. A moderate amount of whipped cream I can understand. But plain cream….??? Well, anyways, he loves it. So I learn to bake sweet things more often. One of his favorite, and now mine too, is Peach Cobbler.
The other day I was browsing through Peach Cobbler recipe and picked the one from Elise, Simply Recipes. With a few adjustments like some additional ingredients of crushed corn flakes to give more texture to the cobbler and half a cup of dessicated coconut which gives a beautiful creaminess flavour and depth.
The week after, I thought I could bake another cobbler but couldn’t think of any other fruit that I like and is available in the mainland. We have lots and lots of bananas here. And I am a HUGE fan of Banana Foster. Hey, maybe I can make a more interesting cobbler with banana. An idea was already formed in my mind, just need to see if someone else has done it before and I couldn’t find anything like this on search engine. There is one banana cobbler recipe on the net but doesn’t look too exciting using plain chunks of banana and caramel only….
Instead of using plain cut up bananas, I will caramelize them a bit in a pan with a bit of butter. Their flavour come out fully — combined with butter, the aroma would be just beautiful. I’m placing dollops of chocolate melts here and there so upon baking the cobbler will have great combination of slightly crunchy toppings with delicate coconut flavors, sweet gooey caramelized banana dotted with melted chocolate here and there. Whoooo!!! I’m in heaven….

HOPSCOTCH (Banana-Choco) COBBLER
Ingredients:
* 7 pcs large ripe bananas
* 2 cups sifted all-purpose flour
* 1 cup of sugar
* 1/ cup dessicated coconut
* 1 cup crushed corn flakes
* 1 1/4 baking powder
* 3/4 cup butter
* 4 tbs heavy cream (add if necessary)
* 2 tsp vanilla extract
* pinch of ground cinnamon
– Mix everything together in a bowl, except for bananas
Ingredients for melted chocolate:
* 1/3 cup Dutch cocoa
* 1/2 cup dark chocolate chips
* pinch of salt
* 1/2 cup heavy cream
* 1 tsp vanilla
— Mix all ingredients and microwave until choc chips soften
Directions:
1.) Cut bananas into 3. Using butter, lightly fry them until brown & caramelize
2.) Place banans in an oven proof baking dish
3.) Sprinkle 1/3 cup of sugar & pinch of cinnamon
4.) Dot with dollops of melted chocolate
5.) Top with flour mixture, dot with the rest of melted chocolate
6.) Bake for about 50 – 60 mnts at 180C
7.) Serve warm with whipped cream/vanilla ice cream
or swimming in heavy cream like the way my hubby does

what a unique and completely scrumptious treat! the addition of coconut and the simple roasting of the bananners tipped the scales from awesome to OUTSTANDING–bravo!
