
Sudah hampir semingguan ini menu masakan nggak jauh-jauh dari mie, sup dan soto. Cuaca udah mulai dingin sih, di rumah juga sudah perlu pasang heater kalau menjelang malam. Kaus kaki & sweater juga sudah siap terlipat di sofa dekat tv. Biasanya kalau hawa dingin begini, makanan yang bikin kangen berat itu Mie Ayam Jamur nya GM. Potongan dada ayamnya yang besar-besar, lengkap dengan irisan jamurnya yang montok. Ditambah sama pangsit gorengnya yang kriuk-kriuk….. wuiiihhhhh….. rela deh rasanya disuruh jalan ngesot dari Blok M ke PIM demi tiga mangkok mie ayam jamur. *untungnya ga perlu jalan ngesot, sangking skarang dah bisa bikin mie ayam jamur sendiri yang rasanya mirip lah sama GM*
Menjelang musim dingin disini biasanya semakin banyak dijual bermacam-macam jamur. Yang paling umum disini adalah straw mushrooms, button mushrooms dan shimeji mushrooms. Di mainlan sini banyakan dijual shimeji yang coklat, bukan yang putih. Tekstur jamur shimeji pas untuk dibikin campuran mie ayam jamur. Sedikit lebih kenyal dari straw mushroom, walaupun gak sekenyal enoki mushrooms. Hasilnya, wes manteeeeebbbbbb!!!
Chicken Mushroom Noodle Soup
Ingredients:
* Egg noodles (fresh or dry – for 3 pax)
* 1 pack of fresh shimeji mushrooms – sliced
* 1 pack of fresh button mushrooms – sliced
* 1 pack of fresh straw mushrooms – sliced
* 350 gr breast fillet/thigh – cubed
* 8 cloves garlic, crushed
* 3 cm fresh ginger, crushed
* 1 tsp soy sauce
* 1 tbs sweet soy sauce
* dash of sesame oil
* chicken skin/fat for chicken oil
* salt, pepper and sugar to taste
Directions:
1.) I usually make my own broth from scratch using chicken bones & feet
Add crushed garlic & ginger. Tie a bunch of spring onions, dump into the pot.
Add salt,pepper and sugar. Set aside
2.) Stir fry garlic until fragrant, add crushed ginger. Add chicken cubes, cook until tender
3.) Add sliced mushrooms. Add soy sauce, sesame oil, a cup of chicken broth
Salt, pepper, sugar to taste. Thicken sauce with corn flour. Set aside
4.) Chicken Garlic Oil
Heat a cup of oil in a pan, fry chicken skin/fat until almost crispy
Add crushed garlic, crushed ginger, salt & sugar
Cook a little longer until the skin are crispy. Discard skin, garlic & ginger
Keep oil in a container for a week.
How to serve:
1.) Prepare a bowl, drizzle chicken garlic oil & soy sauce
2.) Mix them with boiled egg noodle
3.) Top with chicken-mushroom mixture
4.) Pour hot broth over. Noodle is ready to serve

Yups, this is one of my comfort foods too. Noodle soup with mushrooms. Beautiful color clash there
