Caramel & Butterscotch Cookies

Caramel Butterscotch Cookies

I’ve made this cookie twice. Always been a favorite for morning coffee. I love how the caramel flavored cookie and butterscotch chip melts in the mouth after a sip of strong coffee. I’m thinking of making another jar of cookies again for next week….   I start to enjoy making cookies lately. They’re easy, quick and less messy in the kitchen.


CARAMEL & BUTTERSCOTCH COOKIES

Ingredients:
* 115 gr unsalted butter
* 200 gr brown sugar
* 1 egg
* 2 tsp caramel essence
* 190 gr plain flour
* 1/2 tsp bicarbonate soda
* 1/2tsp baking powder
* 1/4 tsp salt
* 50 gr oatmeal
* 1 cup of butterscotch chips
(mixed with chocolate chips – optional)

Directions:

1.) Preheat oven t0 190°C or 375F. Beat butter and sugar until fluffy
2.) Add egg and caramel essence
3.) Sift dry ingredients – stir in oatmeal.
4.) Mix butter-sugar with dry ingredients
5.) Roll into balls, using fingers flatten slightly
6.) Place onto non-stick baking sheet/silicone sheet
7.) Bake 8 – 10 minutes. Cook on rack. Store in tight container
