Mocha Macademia Cupcakes

Phew, finally another posting in my cooking blog. It’s just so much going on lately. Photo processing and uploading them seem to be the last thing on my mind. It’s such a relief that I finally get the help I need with the baby, otherwise I would be one sleep deprived cranky mom who has no time to cook or house keeping. Bear in mind when we say “cooking”, we – food bloggers, mean a proper way of cooking food. Not just something to eat. Not a 5 minute pizza throw-in-the-microwave cooking or package spices just add chicken thing. Please. We passed through that stage when we were in college. Of course I do instant noodles or boiled eggs once in a while when time is limited. But that’s not cooking. That’s surviving. KFC delivery or room service also count as surviving.

I haven’t had anything mocha for a long time. The creamy mocha icing taste great, with just the right kick as I’m also adding spoons of instant coffee.  I’m never a huge fan of that sort of icing, the creamy buttery type. I like the icing for margarita cupcakes that I made before or baileys cupcakes type of icing better though. But this will do to fix my sweet cravings for now.

Mocha Macademia Cupcakes

For the cupcakes:
* 225 gr unsalted butter
* 225 caster sugar
* 225 gr self raising flour
* 1 tsp baking powder
* 4 eggs
* 1 tsp vanilla essence
* 100 gr chopped macademia nuts

Creamy Butter Icing:
* 115 gr unsalted butter – softened
* 225 gr icing sugar, sieved
* 1 tsp mocha essence
* 1 tsp instant coffee granule
* colored pearls for icing decoration

Directions:
1.) Preheat oven 175C or 350F. Prepare muffin tin & place paper cups
2.) Combine all cupcake ingredient – set aside macademia
3.) Whisk ingredients until smooth and fluffy. Stir in chopped macademia
4.) Spoon batter into paper cups. Bake for about 20 mnts
5.) Let cool on a wire rack

6.) Whisk butter & icing sugar until smooth & creamy
7.) Stir in essence & instant coffee granule
8.) Ice the cooled cupcakes. Sprinkles with colored pearls.
9.) Store in a fridge up to 3 days
