One of my favorite curry which is not s0 commonly heard is Gajeboh curry. I assume because of its unpopular main ingredient, extremely fatty part of the meat. Actually a couple of pieces I made was fat only, that thick layer of serious fat. Something they would have in Fear Factor. However its tastefully rich gravy, quite spicy and sour, combined with steaming jasmine rice is a great match with big chunks of fat. Yummy but not recommended for people with high cholesterol or heart problems.
Ingredients :
* 400 grams beef brisket, fatty one
* 4 pcs cloves
* 3 stalks of lemongrass – bruised
* 1 pcs turmeric leaf
* 3 pcs white cardamoms
* 5 pcs kaffir lime leaves
* 2 cm fresh galangal – bruised
*2 cups of water – adjust to your liking
* 3 cups of thick coconut milk
Ground Ingredients:
* 100 gr red chilies
* 8 pcs shallots
* 4 pcs garlic
* 1 tsp coriander seeds, toasted
* 2 cm fresh ginger
** ground all ingredients into a paste
Directions:
1.) Cook brisket in a pot with water, cloves, lemongrass, turmeric leaf, galangal, cardamom & kaffir lime leaves until half cooked
2.) Fry ground ingredients until fragrant & well cooked
3.) Add into the brisket pot. Add salt, pepper, sugar to taste
4.) Stir in coconut milk, keep stirring until brisket is tender and gravy thickens
5.) Serve with steaming jasmine rice.
